Directions:  
Cut tops off green peppers core and place in boiling water for 5 minutes then drain. Spray skilliet with olive oil spray. Saute onion and chopped green pepper tops 5 minutes. Add boca crumbles, black beans ,corn tomatoes and spices. Simmer 10 minutes. Place drained bell peppers in 2 quart casserole dish and fill with 1-1/2 cup mixture. Bake in a 350 degree preheated oven for 15 minutes. Cut cheese slice into 4 pieces and top peppers and bake for 5 minutes more.
