Tomato Minestrone Soup

1		celery, chopped
2  cups		canned plum tomatoes, drained and chopped
4  tablespoons		basil, chopped
2  tablespoons		parsley, chopped
2  tablespoons		chives, chopped
1  pinch		Cayenne pepper
1  pinch		Ground Black Pepper
4  cups		Imagine Natural Creations Organic Low Sodium Vegetable Broth
2  cups		Steamed Spinach, chopped
2  cups		Kale steamed, chopped
1  cup		Sweet Potato, chopped
1/2		vidalia onion, diced

In a large sauce pan, combine 1/2 cup of the stock and the onion, celery, and sweet potato. Sweat the vegetables for 8 minutes over medium heat, stirring often. The stock will reduce and the vegetables will start to brown.
Add the tomatoes and the rest of the stock, simmer until the vegetables are soft.
Add the basil, parsley, chives, spinach, and kale, simmer for 5 minutes. (Optional: remove from heat and blend with an immersion stick blender)
Season with black pepper and a pinch of cayenne.
