Description: Quick and easy delicate sauce for spagetti, manicotti or chicken cacciotori.
Ingredients:  Makes 6 servings (6 cups)

Directions:  
Heat oil in heavy 5 quart pot over med high heat till hot, not smoking. Saute onion till golden, stirring occasionally. Add garlic and saute, stirring till golden. Add tomatoes that have been finely chopped (drain and reserve juice before chopping) reserved juice, water, sugar and salt. Simmer, uncoverer, stirring occasionally, till thicked. (about 30 minutes). Stir in basil and serve. If chicken is desired, add tenders or pieces of breast meat to sauce about 5 - 10 minutes before sauce is done. Cook tilll chicken is cooked through, but still tender.
