Description: Mini-meatballs as appetizers, or as an addition to any pasta or rice dish (or use some to make a meatball sub!)
Ingredients:  Makes 8 servings (32 pieces)

Preheat oven to 375 degrees.

Line a baking pan or cookie sheet with parchment paper and lightly spray with cooking spray. If using a well-seasoned baking stone, omit this step.

Crush Fiber One to a very fine consistency (like bread-crumbs). This is best done by mini-processor or Magic Bullet.

In medium mixing bowl, add turkey, Egg Beaters, onion flakes, Fiber One crumbs, and Mrs. Dash.

Mix just until ingredients are roughly blended (don't overdo).

Use a mini-melon ball maker or cookie scoop to make 32 mini-meatballs. I used the Pampered Chef small cookie scoop.

Bake at 375 for 15-18 minutes. Enjoy!
