Preheat oven to 350 degrees F. Bring a medium pot of water to a boil; cook potatoes until a fork goes through them cleanly, about 20 minutes. Drain in a colander and run cold water over them to cool. Slice into 1/4-inch rounds and set aside.
In an 8-inch oven-proof frying pan over medium heat, fry sausage slices until they're slightly browned; remove sausage from the pan. Increase heat to medium high and stir-fry spinach until most of the liquid has evaporated, stirring often. Remove pan from heat and set aside.
In a medium bowl, whisk eggs and liquid whites together until combined.
Spread potato slices over bottom of frying pan and top with sausage. Stir spinach into egg mixture and pour eggs over potatoes and sausage. Top frittata with parmesan cheese.
Over medium-low heat, cook frittata until top just starts to set about 5 to 10 minutes. Place frying pan in oven; bake for 10 to 15 minutes or until cheese is bubbling and eggs are firmly set. Let rest for 10 minutes before turning frittata out onto a plate and cutting into eighths.
