Preheat oven to 350 degrees Fahrenheit.

Lightly grease your muffin tins.

In a medium bowl, mix the flour, salt and baking soda.

In a large bowl, beat the sugar and the oil.

Add the mashed banana (and/or chocolate chips and/or chopped pecans, if desired) to the sugar/oil mixture

Stir in the water and vanilla until incorporated.

Add flour mixture, a little at a time and stir until just incorporated.

Fill all 12 muffin cups evenly

Bake about 30 minutes, until they are golden brown and a toothpick inserted in the middle of one or two comes out cleanly.
