Melt Kerrygold in sautee pan; sautee diced onions, then add chopped peppers, and then minced mushrooms. Sautee until mushrooms sweat.

Put all remaining ingredients into sauce pan; add sauteed ingredients.

Add 8 oz of water to chili, with spices. Bring to a boil, and then lower temperature and simmer for as long as you like.

Once chili is to desired consistency/flavor, remove pan from heat and transfer chili to warmed glass container. This helps you avoid the tinny taste that sauce pans can sometimes transfer to acidic foods.
