Vegtable stir fried rice

4  cups		dry white rice
2  cups		water
2  teaspoons		olive oil
2  cups		frozen mixed vegetables ( corn, peas, green beans)
1		whole egg
1  tablespoon		soy sauce

Cook 2 C dry white rice as package directs. Add 1 tsp oil to pan and heat, add vegetables and stir fry until done, set aside. Add 1 teaspoon oil to pan heat, blot rice dry and add to pan stir until oil well coated stir in whole egg , cook stir until egg white is done add vegetables back into pan of rice and stir until warmed through, sprinkle with soy sauce. Serve as side or add cooked chicken for a meal.
