White Bean Soup

3  cups		Great Northern Beans
1		roasted garlic head
3/4  cup		medium onion, chopped.
4  ounces		chopped ham, Canadian Bacon or regular bacon
2  cups		chicken broth
1/2  cup		1/2 small can tomato paste or Sofrito or tomato sauce

If using, roast 1 head of garlic, wrapped in aluminum foil tightly, for 30 min in 400 degree oven. (slice of top of head first and sprinkle with olive oil).
Saute onion and ham in 1 Tbs olive oil.
Stir. Add 1 cup broth. Season to taste with salt, pepper, Italian seasoning, onion powder, creole seasoning, ect. Cook's choice.
Take 1 1/2 cups of beans and squeeze in roasted garlic cloves and process till smooth in food processer.
Add mixture back to beans in pan. Simmer 30 min. Add more broth to thickness preference if needed. Add more seasoning to personal preference.
Serve with crusty bread.
