Shred 3 small zucchini and 2 small yellow squash in food processor

In two batches; spread on dry, clean dish towel and fold towel over to wring water out of the veggies in the sink. Wring water 3x with each batch

Chop 1/2 onion finely and caramelize in skillet with sea salt and 1/2 TB of coconut oil

Add onion to zucchini and squash mixture in large bowl

Beat eggs and mix well

Add coconut flour and spices and mix well again

"fry" in large skillet on medium high heat with 1/2 TB coconut oil per two cakes. Two cakes is 1 serving. 4 servings total
