Preheat oven to 375 degrees F.

In a large skillet over medium heat, heat oil, add red pepper flakes and onions. Brown the turkey in the skillet, breaking the meat up with a spatula. Add diced tomatoes and bring the mixture to a boil. Then reduce heat and allow skillet to simmer for 20 minutes. Stir in salt and oregano.

Meanwhile, slice zucchini into 1/8 inch thick slices and layer at the bottom of a 8x8 inch baking dish. Top with meat sauce and 1/4 cup of ricotta. Repeat process until the baking dish is full. Top with parmesan cheese.

Bake for 60 minutes or until heated all the way through.
