Slice zucchini. In a medium sauce pan, combine vinegar, 1/2 cup water, ginger, chiles, sugar, and salt. Bring to a boil. Reduce heat and simmer until sugar dissolves. Remove from heat. Add red pepper flakes. Place zucchini slices in a bowl. Add vinegar mix and let sit at room temp for an hour; stir occasionally.
