Melt butter and oil in a large saucepan over medium-high heat. Add onions; saute 5 minutes. Mix in garlic and rosemary. Add broth and potatoes; bring to a boil. Reduce heat and simmer for 10 minutes. Add zucchini; simmer 15 minutes. In batches, puree in blender. Season with salt and pepper. Serve in tops. Top with green onions and croutons if desired.
