apple pie

1  cup		flour
1/2  cup		butter
1/4  cup		sour cream
1/2  cup		Water
1  teaspoon		lemon juice
1  dash		salt
4		apples
1  tablespoon		zest of one orange
1/4  cup		sugar
1  tablespoon		corn starch
1  teaspoon		cinnamon

Crumble flour and butter together. Add sour cream. Combine well. Roll out to make an upper and a lower crust.
Place the apples , zest , lemon juice and water in a saucepan and bring to a boil. Boil till the apples are soft but not mushy.
A pear can be substituted for one apple.
Mix corn starch in 1/4 cup of water. Add to the apple mixture to thicken. Add sugar and cinnamon to taste.
Combine and egg white with sugar and brush over top of the crust. Prick the pie crust to allow steam to escape.
Bake at 425 for 15 minutes and 350 for 30 minutes.
