Directions:

Preheat oven to 350 degrees.

Mix oatmeal, salt, baking powder, cinnamon, any other spices, and protein powder together in a bowl.

Mix almond milk, eggs, vanilla, and maple syrup in a separate bowl.

Melt 2TB coconut oil in the microwave for about 20 seconds. Add melted coconut oil slowly to the wet ingredients stirring while adding it in.

Combine wet and dry ingredients and mix well.

Spray an 8x8 baking dish with coconut oil spray and pour ingredients in the baking dish. Sprinkle extra cinnamon on top.

Bake for about 25 to 30 minutes until firm to the touch.
