Directions:

heat EVOO, medium heat (I use more oil - or you can use broth also. The frzn collard defrost and blend to make more liquid as well) in a non-stick fry pan that you have a cover for (or use aluminum foil to cover)

soften leeks, minced garlic (to taste) and a little of the collard greens

add chicken and cover with rest of frozen greens. Cover.

let it cook about 12 minutes

flip chicken over and cook rest of the way, resettling it to bottom and recovering somewhat with greens. Check it after about 12 minutes by cutting through center of each.
