fresh peach pie

2  cups		flour
2/3  cup		Crisco Vegetable Shortening
1  teaspoon		Table Salt
8		Medium Peaches - Fresh
1  cup		White Sugar
1/4  cup		White All Purpose Flour - Bleached, Enriched
1/2  teaspoon		Ground Cinnamon
1  tablespoon		Butter - Salted
1  teaspoon		Lemon Juice - Fresh

blend 2 c. flour and 2/3cup plus 2 Tablespoons of crisco with pastry blender until consistancy of corn meal. Add ice cold water 1 tablespoon at a time up to 5 tablespoons until dough holds togheter well. divide in half and roll out on floured board. line pan with 1 layer.
slice peaches, blend in lemon juice, sugar, flour and cinnamon. fill pan, dot with butter and place top crust on, cut vent hole in top. Bake 35-45 minute until crust is brown. remove brush on egg white and sprikle with sugar. bake additional 5 minutes.
