Directions:  
saute onion, garlic and celery in a large stew pot coated with non-stick spray. Saute 2-3 min. or until onions are tender. Add Italian seasoning and saute 30 more sec, or until fragrant. Add chicken broth, potatoes and zucchini. Stir to blend all ingredients.
Using sausage, make 1 tsp. sized meatballs until all sausage is used up. Drop meatballs into soup as you make them dispersing them evenly.
Bring to a boil, reduce heat, cover and allow to simmer 20-25 min. or until potatoes are tender.
Add spinach, half and half, and parmesan cheese. Stir to combine, cover an simmer until spinach is wilted and soup is heated through.
