Directions:

Place a prosciutto slice on a work surface and then lay a basil leave at one end. Top with a scallop. Wrap the prosciutto around the scallop and basil, tucking in sides. Insert toothpick.

Grill in skillet.

Saute spinach in large skillet with a little oil until wilted.

Add the cream, season with salt and pepper and a little nutmeg.

To serve, make a bed of creamed spinach and top with scallops.
