In a small mixing bowl put shredded imitation crab, cut mushrooms, minced garlic. Mix with spoon until combined

spoon filling into center of chicken breasts, about 2 Tsp. each. Reserve the remaining filling.

Fold chicken in half using 4 toothpicks to hold. Place on foil lined cookie sheet spaced apart.

Lightly drizzle extra virgin olive oil on each breast, sprinkle with garlic powder and oregano.

Place in preheated oven at 350 degrees for 35 min.

When breast are just about done, heat the remaining olive oil, butter, and remaining filling in a small fry pan. Stir occationally.

Remove chicken from oven, top with slice of swiss cheese, let rest for a few minutes. Plate the breasts, topping with heated filling remains.

I torch the cheese to melt it.
