Well I guess it is from many years of good Cajun cooking. We eat foods like cracklings, boudin, king cake, rice, rice, rice, rouxs, preserves, and every ocassion has a cake. My goal here is to still eat all those things in moderation and change up the old standard recipes to a healthier version. I have started by preserving figs yesterday with a sugar subsitute. And the good old gumbo is being made with a powdered roux, and served with brown rice. Today on the stove is duck, chicken sausage, okra gumbo. You can teach an old dog new tricks. On our way to a healthier way of eating.
